What cookware do you reccomend?

I love to cook, but I hate my cookware. The cookware we own is quickly becomming inadequate as my skill increases and dishes get more complex. Ive learned a lot but there are so many different types of cookware that I am unsure what to buy. I would like ot hear from those who consider themsleves accomplished in the kitchen or perhaps are chefs or chefs assistants. Do you prefer stainless steel, enamel, copper clad etc.

We have a gas stove and oven

Do you have a gas or electric stove?
The purpose of a copper plate is to conduct heat. It requires less energy. Cast aluminum also heats better than stainless steel, but costs a lot more.
For saucepans, I prefer basic copper bottom stainless steel.
For saute pans cast aluminum with teflon. Or, cast iron.
Cast iron is best for gas stoves.
A non-coated stainless steel pan works great if you have time to cook s-l-o-w-l-y. The higher the heat, the more oil it requires to prevent sticking, burning.

If you have one of those new ranges, where the element is underneath a ceramic surface, enamel will be good.
